because cattlemans rarely allow to grow up to 200 Kg, but this peculiarity
grow rich Culatello del Matese,
making it an unique product, differ from traditional culatello for
its seasoning, that happen together with pigskin
and not in gall, for salting and flavouring,
tanks to an herbs mix made by Eugenio that represent a precioius family
secret.
